工夫茶,是一種以烏龍茶類爲沖泡茶種的泡茶技法,同時也是中國著名茶俗之一。由於在廣東潮汕地區及福建一帶最爲盛行,所以又名「潮汕工夫茶」。「工夫」兩字有多種涵義,一般有「費時」及「費精力」之意思,由於工夫茶泡茶的方式是極為講究並且易學難精的,對水質、火候、茶葉、茶具、沖泡技法和品飲功力的要求皆非常高,操作起来需要一定的工夫,故稱作工夫茶。時至今日,工夫茶己經發展至一種融精神、禮儀、沏泡技藝、評品質量為一體的完整茶道形式,既是一種茶藝,也是一種民俗的文化象徵。

The Kung Fu tea ceremony is a traditional ritualized form of preparing and presenting tea that works well with Oolong. Its preparation uses short, multiple infusions of a single batch of leaves, which brings out the maximum flavor of tea by using small purple clay teapots. This way of brewing is originated from Fujian and the Chaoshan area of eastern Guangdong during the Song Dynasty, which is why it’s also often referred to as ‘Chaoshan Kungfu Cha’. The Chinese term “Kung Fu” refers to anything that is created or conducted with great effort or skill. The brewing method earned its “Kung Fu” title because it refers to something done with skill, and indeed brewing in this way can bring out the best flavor in a tea, as one controls variables like water temperature and steep time.
